Blueberry Chia Seed Muffin

Ingredients:

167g of blueberries (that was just how many I had in my fridge)

4 tbs chia seeds

2/3 cup organic brown rice flour

3/4 cup oats

1 egg

1 tsp baking soda

1 tsp baking powder

2 tbsp coconut oil

1/2 cup almond milk

1 banana

Set your oven to 375 degrees

Mix the wet stuff! Melt the 2 tbsp of coconut oil but keep it separate

from everything else. If you add it before I

tell you it will hit the cold milk/egg mixture and coagulate into a chunky

coconut mess.

Don’t add the chia seeds until later or it gets frothy and weird. gross.

Mix the dry stuff now, add the wet stuff to the dry stuff. Add the coconut

oil, stir real good, then finally add those chia seeds. I didn’t wait when I

made these the first time and honestly it made the smallest difference

now that I think about it.

Spray a metal cupcake tray then scoop em in. Put them on the lower

rack in the oven, helps make them rise all

perty. Then take pics and send them to me please.
